  • 1/4 cup drained oil-packed sun-dried tomatoes (about 4 pieces), patted dry and finely chopped
  • 2 oz. cream cheese, softened
  • 2 Tbsp. chopped fresh basil, plus more for garnish
  • 1 Tbsp. finely grated Parmesan
  • 1/4 tsp. garlic powder
  • 1/4 tsp. kosher salt
  • Freshly ground black pepper, to taste

Mushrooms

  • 1/2 lb. cremini mushrooms
  • 1 Tbsp. Italian-style bread crumbs

Instructions

  1. Prepare the filling: In a medium bowl, combine the squeezed dry spinach, finely chopped sun-dried tomatoes, softened cream cheese, chopped fresh basil, grated Parmesan, garlic powder, kosher salt, and freshly ground black pepper. Stir until all ingredients are thoroughly mixed.
  2. Prepare the mushrooms: Remove the stems from the cremini mushrooms and arrange the caps domed side down on a work surface. Using a spoon, mound the spinach mixture into each mushroom cap, filling them generously. Sprinkle the tops of the filled mushrooms with Italian-style bread crumbs to add a crispy texture during cooking.
  3. Air fry the mushrooms: Place the stuffed mushrooms, filled side up, into the basket of your air fryer. Set the air fryer to 370°F (188°C) and cook for 8 to 10 minutes, or until the mushrooms are tender and the filling is hot and slightly golden on top.
  4. Serve: Carefully remove the mushrooms from the air fryer and arrange them on a serving platter. Garnish with additional fresh basil for a burst of color and flavor. Serve warm as an appetizer or snack.
