Perfect as a quick snack or a delicious side dish that combines ease with a satisfying crunch.

Ingredients

Scale

Vegetables

  • 3 small/medium zucchini (about 1 1/4 pounds)

Coating

  • 1 1/2 tablespoons extra-virgin olive oil
  • 2 tablespoons panko breadcrumbs
  • 2 tablespoons finely grated Parmesan cheese (or nutritional yeast for vegan option)
  • 1 tablespoon white whole wheat flour or all-purpose flour

Seasonings

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon ground black pepper

Instructions

  1. Trim and Cut: Trim off the ends of the zucchini and cut each into quarters lengthwise. Place each quarter flat side down and cut crosswise into 3/4-inch thick half-moons, yielding uniformly sized chunks around 3/4 inch each. Place these zucchini pieces in a large mixing bowl.
  2. Coat with Oil: Drizzle the zucchini with extra-virgin olive oil and toss thoroughly to ensure even coating over all pieces.
  3. Prepare Coating Mixture: In a separate bowl, combine the panko breadcrumbs, grated Parmesan cheese (or nutritional yeast for vegan), flour, kosher salt, onion powder, and black pepper. Mix well to combine.
  4. Season the Zucchini: Sprinkle the breadcrumb mixture over the oiled zucchini and toss carefully to coat each piece as evenly as possible with the mixture.
  5. Preheat Air Fryer: Preheat the air fryer to 400°F (200°C) to ensure optimal crispiness when cooking.
  6. Air Fry in Batches: Place half of the coated zucchini in the air fryer basket in a single even layer. Avoid overcrowding to allow proper air circulation.
  7. Cook: Air fry the zucchini for 7 to 9 minutes, shaking the basket a few times during cooking to promote even browning. Cook until the breadcrumbs are golden and the zucchini is tender but still holds its shape.
  8. Serve or Keep Warm: Transfer cooked zucchini to a serving plate or a parchment-lined baking sheet if keeping warm in an oven set to 200°F. Repeat the cooking process with the remaining zucchini.

Notes

  • For a vegan option, substitute Parmesan cheese with nutritional yeast.
  • Do not overcrowd the air fryer basket to ensure crispy results.
  • Cut zucchini pieces evenly for consistent cooking.
  • Use whole wheat or all-purpose flour interchangeably according to preference.
  • Keep cooked zucchini warm in a low oven if preparing in batches.
