Instructions

  1. Cream Butter and Sugar: In a mixing bowl, add 1/2 cup butter at room temperature and 1/2 cup powdered sugar. Using a hand whisk or electric whisk, beat them together until the mixture becomes light, creamy, and fluffy.
  2. Add Dry Ingredients: Add 1 cup all-purpose flour and 1/8 teaspoon salt to the creamed mixture. Gently mix until the mixture looks crumbly and starts to clump into a ball easily.
  3. Incorporate Almonds: Add 1/3 cup roughly powdered almonds to the dough, reserving the remaining almonds for later. Mix thoroughly to form a cohesive dough ball.
  4. Prepare the Dough for Chilling: Line a baking tray with baking paper and spread the dough evenly to about 1 centimeter thickness. Sprinkle the remaining roughly powdered almonds over the top and gently press them into the dough.
  5. Chill Dough and Preheat Oven: Place the prepared dough in the fridge for about 30 minutes. Meanwhile, preheat the oven to 160°C (320°F) for 10-15 minutes just before the dough is ready.
  6. Cut the Dough: Remove dough from the fridge and cut horizontally and vertically into finger-sized biscuit pieces while on the tray.
  7. Bake: Bake in the preheated oven at 160°C for 20 minutes in bake mode, then switch to toast mode for an additional 5 minutes to achieve even browning on top.
  8. Re-cut while Warm: Once baked, remove from oven. The bissticks will be very soft, so re-make the cuts along the pre-scored lines while the dough is still warm and soft to separate the biscuits.
  9. Cool and Separate: Allow the almond bisticks to cool completely. Gently unmold from the baking tray and separate into individual biscuits.
  10. Storage: Store the almond biscuits in an airtight container at room temperature in a cool place. They can be kept fresh for up to one week.
