Antipasto Skewers Recipe

Marinated Tortellini
- 9 oz. fresh cheese tortellini
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 Tbsp. balsamic vinegar
- 1/4 cup extra-virgin olive oil
Marinated Mozzarella
- 8 oz. mozzarella balls (such as Ciliegine)
- 1/2 tsp. Italian seasoning
- 1/4 tsp. red pepper flakes
- 1/4 cup extra-virgin olive oil
Other Ingredients
- 4 oz. sliced salami
- 1/4 lb. roasted red peppers, chopped into bite-sized pieces
- 1 bunch fresh basil
- 14 oz. artichoke hearts, drained and chopped into bite-sized pieces
- 1/4 lb. green olives
- Cook Tortellini: Bring a large pot of salted boiling water to a boil. Add the fresh cheese tortellini and cook according to package directions until al dente. Drain the tortellini and transfer it to a large mixing bowl.
- Season Tortellini: While still warm, season the tortellini with kosher salt and freshly ground black pepper to taste. Add the balsamic vinegar and 1/4 cup of extra-virgin olive oil to the bowl and gently toss to combine. Set this aside to allow flavors to meld.
- Marinate Mozzarella: In a small bowl, combine the mozzarella balls with Italian seasoning, red pepper flakes, and the remaining 1/4 cup of extra-virgin olive oil. Stir gently to evenly coat the mozzarella and set aside so it marinates and absorbs the flavors.
- Assemble Skewers: Using cocktail or bamboo skewers, layer the ingredients one by one in this order: a mozzarella ball, a folded slice of salami, a piece of roasted red pepper, a piece of marinated tortellini, a fresh basil leaf, a chunk of artichoke heart, and a green olive. Repeat until all ingredients are used and prepare as many skewers as desired.
