Ingredients

Scale

Apple Filling

  • 3 medium Granny Smith apples, peeled and diced into 1-inch pieces
  • 1 Tablespoon lemon juice
  • 3/4 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon vanilla extract

Egg Rolls

  • 8 egg roll wrappers
  • Vegetable oil, for frying

Optional Serving

  • Whipped cream or caramel sauce, for serving

Instructions

  1. Prepare the Apple Filling: In a medium saucepan set over medium-high heat, combine the diced apples, lemon juice, cinnamon, and sugar. Stir to mix the ingredients evenly.
  2. Thicken the Mixture: In a small bowl, whisk together the cornstarch with 1/3 cup water, then add this slurry to the apple mixture. Stir well and bring the mixture to a boil. Cover, reduce heat to a simmer, and cook until the apples soften slightly and the mixture thickens, about 5 minutes.
  3. Cool the Filling: Remove the saucepan from heat and stir in the vanilla extract. Transfer the apple mixture to a bowl and let it cool completely to ensure it sets properly when wrapped.
  4. Prepare for Rolling: Fill a small dish with water (this will be used to seal the egg rolls) and line a baking sheet with paper towels to drain the fried egg rolls later.
  5. Wrap the Egg Rolls: Once the apple mixture has cooled, arrange the egg roll wrappers on a dry surface. Using a slotted spoon, place about 1/4 cup of apple filling on the lower third of each wrapper. Starting from the bottom, roll the wrapper up while folding in the edges. Moisten your finger with water, run it along the edges to seal the wrapper tightly.
  6. Heat the Oil: Pour at least 4 inches of vegetable oil into a large, heavy-bottomed stock pot and heat it over medium-high heat. Attach a deep-fry thermometer and heat the oil to 360°F (182°C) for optimal frying.
  7. Fry the Egg Rolls: Fry 3 to 4 egg rolls at a time in the hot oil, turning occasionally to ensure even browning. Fry until the egg rolls are golden brown, about 2 to 3 minutes. Remove the fried egg rolls from the oil and place them on the prepared baking sheet to drain excess oil. Repeat with the remaining egg rolls, maintaining the oil temperature at 360°F between batches.
  8. Serve: Serve the crispy apple pie egg rolls immediately. Optionally, offer whipped cream or caramel sauce for dipping to enhance the flavor.

Notes

  • Ensure the apple filling is completely cool before wrapping to prevent the egg roll wrappers from becoming soggy.
  • Maintain the oil temperature at 360°F to achieve crispy and evenly cooked egg rolls.
  • Use a slotted spoon to remove the apple filling so excess liquid stays behind, keeping the filling from being too wet.
  • If you prefer a healthier version, consider baking the egg rolls at 400°F for about 15-20 minutes, turning halfway until golden brown.
  • Store leftover apple pie egg rolls in an airtight container and reheat in an oven or air fryer for crispiness.
