For the Focaccia
- 1 (13″ x 9″) store-bought focaccia
- 4 tbsp. extra-virgin olive oil, divided
- 1 tsp. kosher salt, divided
- Flaky sea salt, to taste
For the Caramelized Onions
- 2 medium red onions, thinly sliced
- 1 tbsp. granulated sugar
- 2 tsp. red wine vinegar
For the Toppings
- 1/4 cup crumbled goat cheese
- 1/2 tsp. smoked paprika
- 5 medium avocados
- 1/2 tsp. freshly ground black pepper
- Preheat and Prepare Focaccia: Arrange a rack in the top third of the oven and preheat it to 450°F. Place the store-bought focaccia on a parchment-lined 13″ x 9″ baking dish and brush the top of the focaccia evenly with 2 tablespoons of olive oil.
- Toast the Focaccia: Bake the focaccia in the oven until the top and edges are lightly browned and crusty, approximately 10 minutes. Remove from the oven and allow it to cool slightly.
- Caramelize the Onions: While the bread is toasting, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the thinly sliced red onions and cook, stirring occasionally, until deeply golden and soft, about 15 to 20 minutes. Season with 1/2 teaspoon kosher salt.
- Add Sugar and Vinegar: Sprinkle granulated sugar over the onions and continue cooking, stirring frequently, until the sugar dissolves, about 1 minute. Slowly pour in the red wine vinegar while stirring and cook until the liquid reduces and the onions have a shiny glaze, about 1 to 2 minutes more.
