Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) to prepare for baking the brie.
  2. Prep the Brie: Cut a piece of parchment paper about 1 inch larger than the brie. Place the brie on top of the parchment and press it into the brie crate to support the cheese fully. Set this crate into the top crate to double the support.
  3. Score the Brie: Using a sharp knife, carefully cut shallow slits across the top of the brie, stopping before reaching the edges to keep the cheese contained while baking. Gently remove the rind from inside these slits to create space for the filling.
  4. Prepare Spiced Fig Jam: In a small bowl, mix together the fig jam, chipotle powder, and smoked paprika until fully combined.
  5. Fill the Brie: Spoon or pipe the spiced fig jam mixture into each slit cut into the brie.
  6. Add Prosciutto: Cut the prosciutto into small pieces and gently press them into the jam-filled slits using the back of a knife.
  7. Bake and Finish: Place the brie with the crate on a small baking sheet and bake in the preheated oven for 25 to 35 minutes until the prosciutto is deeply golden and the cheese is melted but still holding its shape. Remove from the oven, drizzle with honey, and garnish with freshly chopped chives before serving.
