Zucchini Fries:
Breading:
- 1 egg
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- salt and pepper (to taste)
Lemon Parsley Aioli:
- ½ cup mayonnaise
- 1 lemon (juiced)
- 1 garlic clove (minced)
- 1 tablespoon finely chopped parsley
- salt and pepper (to taste)
- Prep zucchini. Preheat the oven to 425°F (218°C) and line two baking trays with parchment paper. Slice the zucchini into quarters. You should have 16 slices per zucchini.
- Prep the breading. Beat the egg in a bowl. Combine parmesan, garlic powder, Italian seasoning, salt, and pepper in a separate bowl.
- Dip the zucchini. Dip a zucchini slice in egg, coat with the cheese mixture, and place on the baking tray. Repeat for all zucchini slices.
- Bake. Bake for 25-30 minutes, flipping halfway. Serve with lemon parsley aioli.
Notes
- For extra crispiness, you can finish the zucchini fries under the broiler for a minute or two.
- Adjust the seasoning in the breading to suit your taste preferences.
