These Baked Zucchini Fries are a delicious and healthier alternative to traditional fries. Crispy on the outside and tender on the inside, they are perfect for snacking or as a side dish.

Zucchini Fries:

  • 2 medium zucchinis

Breading:

  • 1 egg
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • salt and pepper (to taste)

Lemon Parsley Aioli:

  • ½ cup mayonnaise
  • 1 lemon (juiced)
  • 1 garlic clove (minced)
  • 1 tablespoon finely chopped parsley
  • salt and pepper (to taste)

Instructions

  1. Prep zucchini. Preheat the oven to 425°F (218°C) and line two baking trays with parchment paper. Slice the zucchini into quarters. You should have 16 slices per zucchini.
  2. Prep the breading. Beat the egg in a bowl. Combine parmesan, garlic powder, Italian seasoning, salt, and pepper in a separate bowl.
  3. Dip the zucchini. Dip a zucchini slice in egg, coat with the cheese mixture, and place on the baking tray. Repeat for all zucchini slices.
  4. Bake. Bake for 25-30 minutes, flipping halfway. Serve with lemon parsley aioli.

Notes

  • For extra crispiness, you can finish the zucchini fries under the broiler for a minute or two.
  • Adjust the seasoning in the breading to suit your taste preferences.
