Ingredients

Scale

Chicken and Seasoning

  • 2 small chicken breasts (or 1 large)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1 tablespoon olive oil

Flatbread and Toppings

  • 2 flatbread crusts
  • 1/2 cup barbecue sauce (plus more for topping)
  • 2 cups shredded Colby jack cheese
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped cilantro

Instructions

  1. Pound the Chicken: Pound the chicken breasts to an even thickness to ensure they cook evenly.
  2. Mix Seasonings: In a small dish, stir together garlic powder, onion powder, chili powder, salt, and cracked pepper.
  3. Season Chicken: Coat both sides of the chicken breasts with the seasoning blend evenly.
  4. Cook Chicken: Heat a large skillet over medium heat and add olive oil. When hot, add the chicken and cook for 5 minutes on each side, or until fully cooked through and no longer pink inside.
  5. Dice Chicken: Remove the chicken from the skillet and dice into small pieces.
  6. Preheat Oven: While cooking chicken, preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius).
  7. Assemble Flatbreads: Spread each flatbread crust evenly with barbecue sauce, then sprinkle shredded Colby jack cheese over the sauce.
  8. Add Toppings: Arrange the diced chicken pieces and thinly sliced red onions evenly on top of the cheese layer.
  9. Bake Flatbreads: Place the assembled flatbreads on a baking sheet and bake in the preheated oven for 10 to 15 minutes, or until the cheese is melted, hot, and bubbly.
  10. Garnish and Serve: Remove from oven, drizzle additional barbecue sauce over the flatbreads, sprinkle chopped cilantro on top, then slice into wedges and serve warm.

Notes

  • You can substitute chicken breasts with boneless, skinless chicken thighs if you prefer a juicier texture.
  • For a spicier version, add a pinch of cayenne pepper to the seasoning blend.
  • Leftover flatbread can be refrigerated and reheated in the oven or toaster oven for best texture.
  • Make sure not to overload the flatbread with toppings to keep the crust crispy.
