Chicken Marinade:
- 1 pound boneless skinless chicken thighs (or breasts; cut into 1–2 inch pieces)
- 1 large egg white
- 2 tablespoons water
- 1 teaspoon coarse kosher salt
Coconut Sauce:
- 3/4 cup coconut milk (full-fat)
- 1/4 cup sugar
- 1 tablespoon mayonnaise
- 1 ½ teaspoons white vinegar
- 1 ½ teaspoons cornstarch
- 1/4 teaspoon coarse kosher salt
- 1 teaspoon neutral oil
- 1 teaspoon ginger (minced)
- 3/4 cup cornstarch
