  • 1 large egg white
  • 2 tablespoons water
  • 1 teaspoon coarse kosher salt

Coconut Sauce:

  • 3/4 cup coconut milk (full-fat)
  • 1/4 cup sugar
  • 1 tablespoon mayonnaise
  • 1 ½ teaspoons white vinegar
  • 1 ½ teaspoons cornstarch
  • 1/4 teaspoon coarse kosher salt
  • 1 teaspoon neutral oil
  • 1 teaspoon ginger (minced)
  • 3/4 cup cornstarch
  • Neutral oil

Instructions

  1. Marinade: Combine chicken, egg white, water, and salt in a medium bowl. Marinate for at least 20 minutes and up to 24 hours.
  2. Coconut Sauce: In a small bowl, mix coconut milk, sugar, mayonnaise, vinegar, cornstarch, salt, and water. Heat oil in a skillet, saute ginger, add the sauce mixture, and set aside.
