For the Egg Rolls

  • 2 teaspoons diced onion

  • 2 tablespoons yellow mustard
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 12 egg roll wrappers
  • 12 slices American cheese
  • ½ cup chopped dill pickles
  • Olive oil spray or avocado oil spray (for cooking)
  • 1 teaspoon sesame seeds (for garnish)

For the Special Sauce

  • ½ cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 ½ tablespoons ketchup
  • ½ tablespoon apple cider vinegar
  • ¼ teaspoon paprika

Instructions

  1. Cook the beef mixture: In a large skillet over medium-high heat, add the ground sirloin and diced onion. Season with salt and black pepper. Break the meat apart as it cooks until fully browned and no longer pink, about 6-8 minutes.
  2. Drain and season: Turn off heat and drain any excess grease from the pan. Stir in the yellow mustard, ketchup, and Worcestershire sauce until well combined. Set the mixture aside to cool for about 5 minutes.
  3. Prepare egg roll wrappers: Lay one egg roll wrapper flat on a clean surface in a diamond shape with one point facing you. Keep a small bowl of water nearby to help seal the wrappers.
  4. Assemble the egg rolls: Place one slice of American cheese in the center of the wrapper. Top with about 2 tablespoons of the cooled beef mixture and sprinkle with a few chopped dill pickles.
  5. Roll the egg rolls: Dip your finger into the water and wet the bottom edge of the wrapper. Fold the bottom corner up over the filling, tuck in both sides tightly, and roll the wrapper up tightly, sealing the edge. Place the rolled egg roll seam side down on a plate. Repeat with remaining wrappers and filling.
