These Blueberry Biscuits are a delightful twist on classic biscuits with the added sweetness of fresh blueberries. They are perfect for breakfast or as a sweet treat any time of day.

Dough:

  • 11 tablespoons unsalted butter, cold (divided use)
  • 3 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ¼ teaspoons fine sea salt
  • 1 ½ cups fresh blueberries
  • 1 ⅔ cups cold buttermilk

Honey Butter:

  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. Preheat the oven: Preheat the oven to 400°F. Melt 1 tablespoon of butter in an 8×8-inch baking pan in the oven. Brush the melted butter in the pan and set aside.
  2. Prepare the butter: Cut the remaining butter into small pieces and keep cold.
  3. Mix the dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add the cold butter and smash into flat pieces.
  4. Add blueberries and buttermilk: Toss in blueberries, then gently stir in buttermilk until well combined.
  5. Transfer and score: Transfer dough to the prepared pan and score into squares. Do not separate.
  6. Bake: Bake for 40-45 minutes until browned. Let cool for 5 minutes.
  7. Make honey butter: Combine butter, honey, and salt in a bowl. Microwave until melted, then brush on top of biscuits.
  8. Serve: Let cool for 10 more minutes, then cut along the scored marks and serve warm.
