Delight in these luscious Blueberry Buttercream Chocolates, combining a smooth, creamy blueberry-flavored buttercream encased in rich melted chocolate. Perfect as a sweet treat or gift, this recipe creates bite-sized indulgences with a fruity twist. The buttercream is whipped to perfection, chilled, cut into squares, then dipped in chocolate for a decadent finish.

Ingredients

Scale

Buttercream

  • 720 grams powdered sugar (6 cups)
  • 170 grams unsalted butter, softened (¾ cup)
  • 54 grams blueberry flavor paste (3 tbsp)
  • 45 grams whole milk (3 tbsp)
  • 1 gram salt (½ teaspoon)

Chocolate Coating

  • Melted chocolate (quantity as needed for dipping)

Instructions

  1. Prepare the pan: Line an 8 x 6 quarter sheet pan with parchment paper to prevent sticking and for easy removal later.
  2. Beat the butter: In a large mixing bowl, beat the softened unsalted butter until it becomes smooth and creamy, ensuring a light texture for the buttercream.
  3. Add powdered sugar: Gradually incorporate the powdered sugar into the butter, mixing thoroughly after each addition until fully combined.
  4. Mix in flavor and salt: Stir in the blueberry flavor paste and salt evenly to infuse the buttercream with bright blueberry notes and balance the sweetness.
  5. Add milk and finish buttercream: Pour in the whole milk and continue mixing until the buttercream achieves a smooth, spreadable consistency suitable for shaping.
  6. Chill the buttercream: Spread the buttercream evenly into your prepared pan and refrigerate for 15–20 minutes until firm enough to cut.
  7. Cut into squares: Remove from the fridge and cut into 1″ x 1″ squares. Place these squares on a parchment-lined tray and allow them to dry for 12 to 24 hours to firm up further.
  8. Dip in chocolate: Using melted chocolate, dip each buttercream square completely, coating them for a smooth chocolate shell. Let cool until the chocolate hardens before serving.

Notes

  • Use high-quality blueberry paste for an authentic fruit flavor.
  • Ensure butter is softened but not melted for the best buttercream texture.
  • Drying the buttercream squares before dipping helps the chocolate coating set more smoothly.
  • Chill the dipped chocolates in the fridge for faster setting.
  • Store finished chocolates in a cool, dry place or refrigerated for longer freshness.
