  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch (optional)

For the Yogurt Mixture:

  • 1 cup Greek yogurt
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until blueberries soften.
  2. If using cornstarch: Dissolve cornstarch in water and stir into blueberry mixture to thicken. Remove from heat and cool completely.
  3. Mix the Yogurt: In a bowl, combine Greek yogurt and vanilla extract until smooth. Adjust sweetness with honey or maple syrup.
  4. Fill Molds: Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
  5. Add Blueberry Swirl: Top each yogurt portion with a spoonful of cooled blueberry compote. Swirl gently with a toothpick for a marbled effect.
  6. Freeze: Place molds in the freezer for at least 3 hours until solid.
  7. Serve: Remove frozen bites from molds and store in an airtight container in the freezer. Allow to sit for 2–3 minutes before enjoying.
