For the Roasted Broccoli:

  • 250g / 9oz Broccoli, sliced into small bite-sized pieces
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

For the Gnocchi:

  • 150g / 5.3oz Streaky Bacon, diced
  • 2 small Shallots, finely diced
  • 180ml / 3/4 cup low-salt Chicken Stock
  • 1x 150g/5.3oz block of Garlic & Herb Boursin Cheese
  • 60ml / 1/4 cup Single Cream/Half & Half
  • 20g / 1/4 cup freshly grated Parmesan
  • 500g / 1lb uncooked Gnocchi
  • 1 tbsp finely diced Fresh Parsley, to serve (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 200C/390F. Roast the broccoli with olive oil, salt, and pepper.
  2. Cook Bacon: Fry bacon until crispy, then set aside. Cook shallots in bacon fat until soft.
  3. Make Sauce: Add stock, Boursin, cream, and parmesan to the pan. Simmer until thickened.
  4. Cook Gnocchi: Boil gnocchi, then transfer to the sauce along with bacon and broccoli. Simmer until heated through.
  5. Serve: Adjust seasoning, garnish with parsley, and serve.

Notes

  • Make sure to keep an eye on the broccoli while roasting to prevent burning.
  • If the sauce is too thick, thin it out with a splash of gnocchi water.
