Instructions

  1. Prepare the egg mixture: In a mixing bowl, add the eggs, milk, and salt. Beat the mixture well until fully combined and slightly frothy for fluffy eggs.
  2. Cook the eggs: Heat a medium skillet over medium heat and melt the butter. Pour in the egg mixture and cook gently, stirring occasionally, until eggs are mostly set but still moist. Remove the pan from the heat to avoid overcooking.
  3. Combine fillings: Stir the crumbled fried bacon and shredded cheddar cheese into the warm eggs until evenly incorporated.
  4. Assemble the egg rolls: Spoon about 1/4 cup of the egg mixture onto the center of each egg roll wrapper. Fold in the sides and roll tightly. Before sealing the final edge, dip your finger in water and moisten the edge to ensure the egg roll stays closed during cooking. Repeat with all wrappers.
  5. Prepare for air frying: Lightly spray each egg roll on all sides with oil spray to promote crispiness and prevent sticking.
  6. Air fry the egg rolls: Place the egg rolls in a single layer in the air fryer basket, leaving space around each for proper air circulation. Depending on your air fryer size, cook in 2-3 batches. Air fry at 390°F (199°C) for 7 minutes, flipping the egg rolls halfway through cooking until golden brown and crisp on all sides.
  7. Serve: Remove the egg rolls from the air fryer and serve hot with warm sausage gravy for dipping, if desired.
