Instructions

  1. Cook the sausage: In a non-stick skillet, cook the ground breakfast sausage over medium heat until it is no longer pink and fully cooked through. Transfer the sausage to a paper towel-lined bowl to drain excess grease and set aside.
  2. Scramble the eggs: In the same skillet, melt 2 tablespoons of the butter over medium-high heat. Pour in the beaten eggs and scramble them gently until they are just set but still moist. Remove from heat to avoid overcooking.
  3. Combine sausage and eggs: Add the cooked sausage to the scrambled eggs in the bowl and mix gently to combine all flavors evenly.
  4. Assemble the sandwiches: Butter one side of each sourdough bread slice. Heat the skillet over medium heat again and place one slice of bread butter-side down. Layer with one slice of Colby-Jack cheese, then a generous scoop of the egg and sausage mixture, followed by another slice of cheese, and finally top with another slice of bread, butter-side up.
