Peanut Butter Frosting

  • 1 cup smooth peanut butter
  • 1 cup confectioners’ sugar (icing sugar)
  • 2.5 oz / 5 tbsp / 70g / 2/3 stick unsalted butter, softened
  • 3/4 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup heavy cream (unwhipped pouring cream)

Instructions

  1. Preheat and Prepare Baking Trays: Preheat your oven to 180°C (350°F). Line two baking trays with parchment or baking paper for easy cleanup and to prevent sticking.
  2. Melt Butter and Chocolate: Pour about 1 inch (2.5 cm) of water into a large saucepan or small pot and bring it to a simmer over medium-low heat. Place a heatproof bowl over the simmering water to create a double boiler. Add the 115g butter and 300g dark chocolate chips to the bowl and stir until melted and smooth.
  3. Mix Eggs, Sugar, and Cocoa: While the butter and chocolate are melting, beat the 3 eggs, cocoa powder, and caster sugar together in a bowl using an electric mixer on high speed for 3 minutes until well combined and fluffy.
  4. Combine Chocolate with Egg Mixture: Pour one-third of the melted chocolate mixture into the egg batter and mix well. Then add the remaining melted chocolate and stir again to incorporate fully.
  5. Add Vanilla, Salt, Baking Powder: Mix in the vanilla extract, salt, and baking powder until everything is evenly combined.
  6. Fold in Flour and Chocolate Chips: Gradually add the plain flour, mixing just until combined; avoid overmixing to keep the batter tender. Fold in the additional 1/2 cup of dark chocolate chips gently.
