These Brussels Sprouts Sliders are a delightful and unique appetizer featuring caramelized onion jam, crispy bacon, creamy brie cheese, and tender roasted Brussels sprouts as the ‘buns.’ Perfect as a savory snack or party finger food, these sliders combine sweet, tangy, and smoky flavors with a satisfying texture contrast.

Ingredients

Scale

Onion Jam

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup brown sugar
  • 2 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tsp chili powder
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Brussels Sprouts

  • 20 large Brussels sprouts, halved
  • 2 tbsp olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Additional Ingredients

  • 6 slices thick bacon
  • 7 oz wheel brie, cut into squares

Instructions

  1. Make the Onion Jam: Preheat your oven to 375°F. In a large skillet over medium heat, melt the butter. Add the chopped onion and cook until it becomes very soft and translucent, about 8 minutes. Stir in the minced garlic and cook until fragrant, about 1 minute. Add the brown sugar, maple syrup, apple cider vinegar, and chili powder. Season with salt and freshly ground black pepper. Continue cooking the mixture until it reduces and the onions become jammy in texture, about 10 minutes. Remove from heat and set aside.
  2. Roast the Brussels Sprouts: On a large rimmed baking sheet, toss the Brussels sprouts halves with olive oil, salt, and pepper. Spread them out evenly and roast in the oven until just tender and slightly caramelized, about 20 minutes. Remove from the oven and let cool slightly to handle.
  3. Cook the Bacon: In a medium skillet over medium heat, cook the bacon slices until they are crispy, approximately 8 minutes. Transfer the cooked bacon to paper towels to drain excess fat, then chop into bite-sized squares.
  4. Assemble the Sliders: Take one half of a roasted Brussels sprout (cut side up) as the base. Top it with a piece of chopped crispy bacon, then place a square of brie cheese on top of the bacon. Add a small dollop of the prepared onion jam over the brie. Finally, cover with another Brussels sprout half, placing the cut side down to form a ‘bun.’ Secure each slider with a toothpick. Repeat until all ingredients are used and sliders are assembled.

Notes

  • To make these sliders vegetarian, omit the bacon and consider adding a smoky seasoning to the onion jam.
  • Use sturdy toothpicks or small skewers to keep the sliders intact when serving.
  • Bake Brussels sprouts until just tender to prevent them from becoming mushy in the slider.
  • Serve warm or at room temperature for best flavor.
  • Feel free to substitute brie with another melty cheese like camembert or a mild goat cheese.
