Chicken:

  • 3 chicken breasts, cut into small strips

Seasoning:

  • 13 tbsp Cajun seasoning
  • 1 tsp salt

Orzo:

  • 1 cup (200g) orzo pasta
  • 1 cup (240ml) chicken broth

Vegetables:

  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes

Sauce:

  • ¼ cup (60ml) heavy cream
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 tbsp tomato paste
  • 3 tbsp grated parmesan cheese, plus extra to serve

Instructions

  1. Prepare Chicken: Season chicken with Cajun seasoning and salt. Pan fry in butter and oil until colored.
  2. Cook Vegetables: Add onion, garlic, sun-dried tomatoes, and tomato paste. Cook over low heat.
  3. Add Orzo: Stir in orzo, then add chicken broth. Simmer covered for 20 minutes.
  4. Finish Dish: Test orzo for tenderness, stir in spinach, cream, and Parmesan. Adjust seasoning and serve.

Notes

  • If Cajun seasoning is spicy, reduce amount for milder flavor.
  • Adjust consistency with water if needed due to orzo absorbing liquid.
