These California Club Wraps are a delightful combination of flavors and textures, perfect for a quick and satisfying meal. Creamy avocado, crispy bacon, tender chicken, and fresh veggies all wrapped up in a spinach tortilla – a delicious twist on the classic club sandwich.

Bacon:

  • 8 strips bacon

Avocado Smash:

  • 2 avocados (pitted and peeled)
  • 2 tablespoons lemon juice (divided)
  • ½ teaspoon fine ground sea salt (divided)

Mayo Dressing:

  • ⅓ cup mayonnaise
  • ½ teaspoon honey
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried basil
  • freshly ground black pepper (to taste)

Filling:

  • 3 cups shredded rotisserie chicken breast (or leftover turkey)
  • 4 large spinach wraps
  • 4 or 5 green leaf lettuce leaves
  • 1 tomato (chopped)
  • 1 cup finely shredded Monterey Jack cheese

Instructions

  1. Cook the Bacon: Preheat the oven to 425 degrees F and line a large rimmed baking sheet with foil. Bake bacon for 15 minutes until crisp. Drain on paper towels.
  2. Prepare the Other Ingredients: Smash avocado with 1 tbsp lemon juice and salt. In a bowl, mix mayo, honey, onion powder, basil, remaining lemon juice, salt, and pepper. Add chicken.
  3. Assemble the Wraps: Spread avocado on a tortilla, add lettuce, tomato, bacon, chicken mixture, and cheese. Roll up tightly. Repeat for remaining wraps.
  4. Slice and Serve: Slice wraps in half before serving.
