Cauliflower:
- 1 head cauliflower, broken into large florets
Cheese Sauce:
- 40g/1½oz butter
- 40g/1½oz plain flour (gluten-free plain flour also works)
- 400ml/14fl oz milk
- 1 tsp English mustard
- 100g/3½oz mature cheddar, grated
- salt and freshly ground black pepper
- Preheat the oven: Preheat the oven to 190C/170C Fan/Gas 5.
- Prepare the cauliflower: Wash the cauliflower thoroughly and cook in salted water for 3–5 minutes. Drain well.
- Make the cheese sauce: Melt butter, stir in flour, add milk gradually, bring to boil, then simmer. Stir in mustard and cheese until smooth. Season with salt and pepper.
- Assemble and bake: Arrange cauliflower in a baking dish, pour over the cheese sauce, top with remaining cheese, and bake for 25–30 minutes until golden and bubbly.
Notes
- This dish pairs well with roasted meats or as a standalone vegetarian main course.
- You can add breadcrumbs on top for extra crunch.
