Crust

  • 1/4 cup cane sugar
  • 1 tsp cinnamon

  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/8 tsp cardamom

Instructions

  1. Make the crust: Start by making the crust in two batches. Add 1.5 cups flour and 1/2 tsp salt to the food processor. With the motor running, add 1/2 cup vegan butter, then 2 tbsp maple syrup, 2 tbsp almond milk, and 4 tbsp ice water. Pulse until the dough forms a ball. Remove the dough and repeat with the remaining ingredients.
  2. Refrigerate the dough: Divide the dough into two balls, one slightly larger than the other. Wrap both in plastic wrap and refrigerate for 30 minutes.
  3. Preheat oven: Preheat your oven to 400°F (204°C) while the dough chills.
  4. Prepare the filling: Heat coconut oil in a large skillet over medium heat. Add chopped pears and sprinkle with cane sugar and chai spices (cinnamon, ginger, allspice, nutmeg, cloves, cardamom). Sauté for 5-8 minutes until pears soften but remain slightly firm. Remove from heat.
  5. Roll out bottom crust: Flour a work surface, roll out the larger dough ball, and transfer it to a greased pie pan. Crimp the edges as desired.
  6. Add filling: Pour the prepared pear filling into the pie crust evenly.
  7. Roll out top crust: Roll out the smaller dough ball and place it over the filling. Brush the top crust with melted coconut oil or vegan butter and sprinkle lightly with cane sugar.
  8. Bake the pie: Place the pie in the oven and bake at 400°F for 15 minutes. Then reduce the temperature to 375°F (190°C) and continue baking for 40 minutes until the crust is golden brown and filling is bubbling.
