Dough Ingredients

  • 4 garlic cloves, finely chopped
  • 2 tbsp grated mozzarella cheese

Instructions

  1. Make the Dough: In a large bowl, combine the self-raising flour and Greek yoghurt. Stir clockwise until a rough dough forms. Transfer dough to a clean surface and knead for a couple of minutes until smooth. Cover with cling film and set aside while preparing the fillings.
  2. Prepare Fillings: Finely slice the spring onions, chop the garlic, and grate the mozzarella cheese. Set these ingredients aside.
  3. Portion Dough: Divide the dough into 4 equal parts using a knife or dough cutter.
  4. Shape Dough Strips: Lightly flour your clean surface and roll out one piece of dough to about 0.75cm thick. Fold the two outer edges inwards to form a thin rectangular strip. Roll again in one direction to maintain 0.75cm thickness. Trim the top and bottom edges to create a perfect rectangle shape.
  5. Add Fillings and Roll: Drizzle olive oil on one side of the dough strip. Sprinkle the top half of the strip evenly with scallions, garlic, and mozzarella. Cut the bottom half of the strip into thin mini strips to create a lattice pattern. Carefully roll up the bun, enclosing the filling. Repeat for remaining dough pieces.
  6. Steam the Buns: Place each rolled bun on parchment paper and steam in a steamer basket for 15-20 minutes, or until the buns become fluffy and fully cooked.
  7. Optional Pan-Fry: For an added crispy bottom, pan-fry the steamed buns on high heat for about 3 minutes until golden and crisp. Serve warm, optionally garnished with sesame seeds.
