For The Garlic Basil Aioli
- 4 tbsp fresh basil leaves
- 1 tbsp minced garlic
- 2 egg yolks
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 cup extra virgin olive oil
- Scant 1/2 cup canola or avocado oil
For The Chicken Parmesan Sandwiches
- 8 boneless, skinless chicken cutlets or large tenders
- 1 tsp salt
- 1/2 tsp cracked black pepper
- 1/2 cup flour
- 3 large eggs, beaten
- 1 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 2 tbsp extra virgin olive oil
- 4 1/3” thick slices of fresh mozzarella
- 3/4 cup favorite non-chunky tomato sauce
- 4 Ciabatta rolls
- To Make The Basil Garlic Aioli – Add all ingredients except oils to a food processor; blend. Slowly pour in combined oils while blending until emulsified. Chill until ready to use.
- To Make The Chicken Parmesan Sandwiches – Dredge chicken in flour, egg, and panko mixture. Cook in oil until golden brown and cooked through. Assemble sandwiches with aioli, chicken, sauce, mozzarella. Broil until cheese melts. Serve immediately with remaining aioli for dipping.
