For the green beans:

  • 1 tablespoon vegetable oil
  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces

For the chicken:

  • 1 teaspoon vegetable oil
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 teaspoons minced garlic
  • 1/4 cup low sodium chicken broth or water
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • Salt and pepper to taste

Instructions

  1. Heat 1 teaspoon of oil in a large pan over medium heat. Add the green beans and cook for 3-4 minutes until tender.
  2. Remove green beans from the pan, place on a plate, and cover.
  3. Wipe the pan clean with a paper towel and turn the heat to high.
  4. Add remaining tablespoon of oil.
  5. Season chicken with salt and pepper, add to the pan in a single layer, and cook until golden brown and cooked through.
  6. Add garlic to the pan and cook for 30 seconds.
  7. Add green beans back to the pan and cook until warmed through.
  8. Whisk together chicken broth, honey, and soy sauce in a bowl.
  9. Mix cornstarch with a tablespoon of cold water in a small bowl.
  10. Pour soy sauce mixture over chicken and green beans, cook for 30 seconds.
  11. Whisk in cornstarch mixture, bring to a boil, and cook until sauce thickens.
  12. Serve immediately, with rice if desired.
