Ingredients

Scale

Main Ingredients

  • ½ cup unsalted butter
  • 4 cups cooked chicken, chopped
  • 14 oz frozen vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder

Biscuit Topping

  • 1 box Cheddar Bay Biscuit Mix including seasoning packet
  • 2 cups milk
  • ½ cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375º F to prepare for baking the cobbler.
  2. Melt Butter: Place the ½ cup of unsalted butter in a 13×9 inch baking pan and put it in the oven as it preheats. Leave it there until the butter has completely melted, then remove from the oven.
  3. Layer Chicken and Vegetables: Spread the chopped cooked chicken evenly over the melted butter in the baking pan. Then spread the frozen vegetables evenly over the chicken layer without mixing them together.
  4. Prepare Biscuit Mixture: In a bowl, combine the Cheddar Bay Biscuit Mix along with the seasoning packet, 2 cups milk, and ½ cup shredded cheddar cheese. Mix until just incorporated.
  5. Top the Cobbler: Pour the biscuit mixture evenly over the vegetables in the baking pan. Gently spread it without mixing the layers beneath.
  6. Add Soup Mixture: In a separate bowl, mix together the chicken broth, cream of chicken soup, and garlic powder. Pour this mixture over the biscuit topping carefully, without stirring.
  7. Bake the Cobbler: Place the baking pan back into the oven and bake for 45 to 50 minutes. Bake until the crust is golden brown, completely set, and the filling is hot and bubbly.
  8. Rest and Serve: Remove the cobbler from the oven and allow it to cool for one to two minutes before serving to let it set slightly.

Notes

  • Do not stir the layers after assembling to maintain distinct textures and flavors.
  • Frozen mixed vegetables can be substituted with fresh vegetables, but adjust cooking time accordingly.
  • If you prefer a thicker filling, reduce the amount of chicken broth slightly.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
  • For a spicier version, add a pinch of cayenne pepper or chili flakes to the soup mixture.
