This Chicken Cordon Bleu Soup is a creamy, comforting dish inspired by the classic chicken cordon bleu flavors. It combines tender chicken, savory ham, smooth cream cheese, and a hint of Dijon mustard to create a rich and satisfying soup. Topped with shredded Swiss cheese and crunchy croutons, this soup makes a perfect hearty meal for any day.

Ingredients

Scale

Soup Base

  • ¼ cup unsalted butter
  • 1 small yellow onion, diced
  • 2 carrots, diced
  • 2 ribs celery, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon pepper
  • 1 (32 oz) box chicken broth
  • 1 pint heavy cream
  • 2 tablespoons Dijon mustard

Protein

  • 4 cups cooked and cubed chicken (about 1 store-bought rotisserie chicken, approx. 1 pound)
  • 1 (8 oz) package cubed ham (leftover holiday ham works great)

Dairy & Garnish

  • 1 (8 oz) block cream cheese, cubed and softened to room temperature
  • Swiss cheese, shredded for serving
  • Homemade or store-bought croutons for serving

Instructions

  1. Prepare the vegetables: Melt the unsalted butter in a large stockpot over medium heat. Once melted, add the diced yellow onion, carrots, celery, minced garlic, paprika, salt, and pepper. Cook, stirring regularly, until the carrots have softened, about 10 minutes.
  2. Add liquids and proteins: Pour in the chicken broth and heavy cream, then stir in the Dijon mustard. Add the cooked, cubed chicken and cubed ham to the pot.
  3. Incorporate cream cheese: Add the cubed, softened cream cheese to the soup and stir regularly as the soup heats. Continue cooking until the cream cheese has fully melted and the soup is hot throughout.
  4. Final seasoning and serving: Taste the soup and adjust seasoning with additional salt or pepper if needed. Spoon the soup into bowls and top each serving with shredded Swiss cheese and croutons. Serve warm and enjoy!

Notes

  • Leftover holiday turkey or ham can be used as delicious substitutions for chicken and ham.
  • For a lighter version, you may substitute half-and-half for heavy cream, though the soup will be less rich.
  • Use homemade croutons for added flavor, or store-bought for convenience.
  • This soup reheats well and flavors may deepen when stored overnight.
  • Adjust seasoning to your taste, especially salt, as broth can vary in sodium levels.
