Chicken:

  • 6 thin-sliced chicken breasts

Cream Cheese Sauce:

  • 1 container (8 oz) green onion cream cheese
  • ¼ cup olive oil
  • ½ cup chicken broth

Vegetables and Seasonings:

  • 1 large package of sliced mushrooms
  • 1 small bag of fresh baby spinach
  • 1 dash Weber Herb and Garlic Seasoning

Cheese Topping:

  • 8 oz shredded mozzarella cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken: Place the chicken breasts in a baking dish, season with salt, pepper, and Weber Herb and Garlic Seasoning.
  3. Cook Mushrooms and Spinach: Sauté mushrooms in olive oil until softened. Layer mushrooms and spinach over the chicken.
  4. Make Creamy Sauce: Combine cream cheese, chicken broth, and olive oil. Pour over chicken and vegetables.
  5. Bake Covered: Cover with foil and bake for 20 minutes.
  6. Bake Uncovered: Remove foil and bake for another 20 minutes.
  7. Add Cheese: Sprinkle mozzarella over the dish and bake until melted and bubbly.
