For the Mushrooms:

  • 1 1/2 lbs fresh mushrooms (about 18 mushrooms, 1 1/2″ in diameter)
  • 1 medium to large yellow onion, finely diced
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons unsalted butter

For the Filling:

  • 8 oz cream cheese (regular or low-fat)
  • 10 oz can of chicken, well-drained
  • 3/4 cup finely grated mozzarella cheese

Instructions

  1. Prepare the Mushrooms: Clean the mushrooms, remove stems, and scoop out centers. Chop stems and mushroom bits.
  2. Sauté the Onion and Mushrooms: Cook mushroom stems and onion until soft and golden.
  3. Prepare the Filling: Combine cream cheese and chicken, season, and mix well.
  4. Mix the Mushroom-Onion Blend: Add sautéed mushrooms and onions to the cream cheese mixture and combine.
  5. Stuff the Mushrooms: Fill mushroom caps with the mixture.
  6. Top with Mozzarella: Sprinkle grated mozzarella over the stuffed mushrooms.
  7. Bake: Preheat oven to 400°F, bake stuffed mushrooms for 10-12 minutes until soft. Serve hot.
