Ingredients

Scale

Cheesecake Base

  • 1 cup fresh ricotta cheese
  • 8 oz softened cream cheese
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/2 pack of chocolate pudding mix (about 3.4 oz)

Garnish

  • Semi-sweet chocolate chips, for sprinkling
  • Fresh mint or rosemary, optional for garnish

Instructions

  1. Prepare the Base Mixture: In a large mixing bowl, use a stand mixer or handheld mixer to combine the fresh ricotta and softened cream cheese on low speed until smooth and slightly thickened, ensuring there are no lumps.
  2. Add Liquids and Flavor: Pour in the milk, heavy cream, and vanilla extract to the mixture and continue mixing on low speed to incorporate all ingredients evenly.
  3. Incorporate Chocolate Pudding: Gradually add the chocolate pudding mix and increase the mixer speed to high. Beat until the mixture becomes thick and fluffy. If the mousse is not firm enough, add a little more pudding powder and continue beating until stiff peaks form and the texture is light and airy.
  4. Pipe into Serving Cups: Transfer the mousse mixture into a piping bag. Pipe the mousse into individual serving cups or jars, creating a peak on the top for an elegant presentation.
  5. Garnish the Mousse: Sprinkle semi-sweet chocolate chips on top of each serving. Add a sprig of fresh mint or rosemary to each for an appealing and fragrant garnish.
  6. Chill and Set: Refrigerate the mousse cheesecake for at least 1 hour, allowing it to firm up and develop a mousse-like texture before serving.

Notes

  • Use full-fat cream cheese and ricotta for the best creamy texture and flavor.
  • If you prefer a sweeter dessert, adjust the amount of chocolate pudding powder or sprinkle additional sugar before serving.
  • For a gluten-free dessert, ensure the chocolate pudding mix and chocolate chips are gluten-free certified.
  • Can be made a day ahead and stored in the refrigerator covered with plastic wrap.
  • For a more intense chocolate flavor, consider adding a tablespoon of cocoa powder with the pudding mix.
