Cinnamon Swirl:
- 1/4 cup butter (softened, almost melted)
- 1/4 cup brown sugar replacement
- 1 tbsp allulose (or xylitol)
- 1 tbsp ground cinnamon
Muffins:
- 3/4 cup cottage cheese
- 3 large eggs
- 1/3 cup Swerve Sweetener (or other granular sweetener)
- 1 tsp vanilla extract
- 1 3/4 cup almond flour
- 3/4 cup unflavored whey protein powder
- 2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup Swerve Confectioners
- 1 tbsp heavy whipping cream
- Water as needed
- Cinnamon Swirl – In a medium bowl, stir together the butter, sweeteners, and cinnamon. Set aside.
- Muffins – Preheat the oven. Combine cottage cheese, eggs, sweetener, and vanilla in a blender. Add almond flour, whey protein, baking powder, and salt. Fill muffin cups with batter, add cinnamon swirl, top with remaining batter, and more cinnamon swirl. Bake until golden. Cool and transfer to a wire rack.
- Optional Drizzle – Whisk sweetener and cream, add water for drizzling consistency. Drizzle over muffins.

- You can customize the sweetness level by adjusting the amount of sweetener used.
- Ensure the butter for the cinnamon swirl is softened but not fully melted.
