  • 1/3 cup coconut flour
  • 1 tsp vanilla
  • 1 tsp baking powder or soda

  • 2 tbsp melted butter

For the Cinnamon Swirl:

  • 2 tbsp Joy Filled Eats Sweetener (or see alternatives in recipe notes)
  • 2 tbsp cinnamon

For the Cream Cheese Icing:

  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sweetener

Instructions

  1. Prepare the Waffle Batter: Blend cottage cheese until smooth. Add cream cheese and blend. Mix in remaining batter ingredients.
  2. Prepare the Cinnamon Swirl: Combine sweetener and cinnamon.
  3. Cook the Waffles: Grease waffle iron, pour batter, add cinnamon swirl, and cook until golden.
  4. Make the Cream Cheese Icing: Combine cream cheese and powdered sweetener.
  5. Serve: Top waffles with icing and enjoy!
