This Coca Cola Pot Roast is a comforting and flavorful slow-cooked meal featuring tender chuck roast simmered with carrots, potatoes, onions, and a unique blend of Coca Cola, Worcestershire sauce, and creamy mushroom soup. It’s an easy, hands-off recipe perfect for hearty family dinners.

Ingredients

Scale

Meat

  • 3 lbs. chuck roast (can use 34 lbs)

Vegetables

  • 1 lb. baby carrots
  • 1 lb. red potatoes, quartered or halved baby red potatoes
  • 1 white onion, diced large

Soups & Seasonings

  • 1 oz. Lipton onion soup mix
  • 10.5 oz. cream of mushroom soup
  • 3 Tbsp. Worcestershire sauce

Liquids

  • 12 oz. can Coca Cola

Instructions

  1. Prepare the Ingredients: Place the chuck roast in the slow cooker. Add the baby carrots, quartered or halved red potatoes, and diced white onion around the roast to create an even layer of vegetables.
  2. Add Seasonings and Soups: Sprinkle the Lipton onion soup mix evenly over the roast and vegetables. Spoon the cream of mushroom soup on top; it’s fine to smear it roughly as it will cook into the dish and blend the flavors.
  3. Pour Liquids: Drizzle the Worcestershire sauce over everything, then pour in the Coca Cola, which will provide sweetness and depth to the gravy during slow cooking.
  4. Slow Cook: Cover and cook on LOW for 9 hours. Avoid opening the lid during cooking to maintain heat and ensure the roast becomes tender.
  5. Shred the Roast: After cooking, carefully remove the beef onto a plate. Use two forks to shred the meat, discarding any visible fat to keep the dish leaner.
  6. Degrease the Gravy: Using paper towels, skim the top of the cooking liquid in the slow cooker to remove excess fat and grease.
  7. Combine and Serve: Return the shredded beef back into the slow cooker to merge with the vegetables and sauce. Serve hot with the flavorful gravy spooned over the top and enjoy your hearty pot roast.

Notes

  • You can substitute baby red potatoes with Yukon gold or russet potatoes if desired.
  • For a richer flavor, brown the chuck roast in a skillet before placing it in the slow cooker.
  • Do not open the slow cooker lid during cooking to prevent heat loss and ensure optimal tenderness.
  • If you prefer thicker gravy, you can remove some cooking liquid after shredding and thicken it with a cornstarch slurry on the stovetop before returning it to the slow cooker.
  • Leftovers store well and can be refrigerated for up to 3 days or frozen for longer storage.
