These Coffee Protein Balls are a delicious and energizing snack perfect for a quick pick-me-up. Made with almond meal, vanilla protein powder, almond butter, and a hint of coffee, they offer a balanced blend of protein and healthy fats. Optional dark chocolate drizzle adds a rich touch, making them a perfect treat for coffee lovers seeking a healthy bite.

Ingredients

Scale

Dry Ingredients

  • 1 cup almond meal
  • 2 scoops (about 1/2 cup) vanilla protein powder (or any flavor)
  • 1 Tbsp ground coffee beans (or instant coffee granules)

Wet Ingredients

  • 1/2 cup almond butter
  • 4 Tbsp pure maple syrup

Optional

  • 30 g dark chocolate, melted (for drizzling)

Instructions

  1. Prepare tray: Line a small tray with parchment paper and set aside to place the formed protein balls later.
  2. Blend ingredients: In a high-speed food processor, add the almond meal, protein powder, ground coffee, almond butter, and maple syrup, excluding the chocolate.
  3. Form dough: Blend on high speed until the mixture is well combined and sticky, resembling a soft dough. If the mixture feels too dry, add a little more maple syrup until it holds together.
  4. Roll into balls: Scoop approximately 1–2 tablespoons of the mixture and roll it between your palms into small balls. Place them on the lined tray. If not drizzling with chocolate, transfer the balls directly into a storage container.
  5. Add drizzle: If using, drizzle the melted dark chocolate evenly over the protein balls for an extra flavor boost.
  6. Chill: Place the tray in the refrigerator for 15–20 minutes or until the chocolate has set and the balls are firm. Enjoy your energizing coffee protein balls!

Notes

  • Use instant coffee granules for a milder coffee flavor or ground coffee beans for a stronger, more textured taste.
  • Substitute almond butter with peanut or cashew butter if preferred.
  • Store in an airtight container in the refrigerator for up to one week.
  • To make them vegan, ensure the protein powder used is plant-based and the chocolate is dairy-free.
  • Adjust maple syrup quantity based on desired sweetness and consistency.
