  • 2 tbsp mini rainbow-colored chocolate chips

Instructions

  1. Combine Dry Ingredients: In a large bowl, whisk together almond flour, chocolate protein powder, unsweetened cocoa powder, and kosher salt to ensure even distribution of all dry components.
  2. Add Wet Ingredients: Add almond butter, almond milk, maple syrup, and pure vanilla extract to the dry mixture. Using a rubber spatula, fold the ingredients until a well-combined dough forms, ensuring no dry spots remain.
  3. Form Bites: Scoop heaping tablespoons (about 20 g each) of the dough and roll them between your palms into balls. You should be able to make approximately 12 balls. Place the balls on a parchment-lined baking sheet. If the dough is sticky or the balls look like they might slump, freeze them for 15 minutes to firm up before continuing.
  4. Melt Chocolate Coating: In a medium heatproof bowl, microwave the dark chocolate and refined coconut oil in 30-second increments. Stir between each interval until the mixture is fully melted and smooth, which should take about 90 seconds in total.
