Instructions

  1. Preheat the oven: Preheat your oven to 400 degrees F (204 degrees C) and line a large baking sheet with parchment paper to prevent sticking.
  2. Prepare the batter: In a blender or food processor, combine cottage cheese, eggs, egg whites, shredded mozzarella cheese, almond flour, and optional seasonings like Italian seasoning and garlic powder. Blend until the mixture is smooth.
  3. Spread the batter: Pour the smooth batter onto the prepared baking sheet and spread it evenly to about 1/8 inch thickness, ensuring it reaches the edges for uniform wraps.
  4. Bake the wraps: Place the baking sheet in the oven and bake for 8-10 minutes until the wrap is semi-firm. For a more golden and firmer wrap, bake up to 15 minutes.
  5. Cool and cut: Remove from oven and allow the wraps to cool for at least 15 minutes. Then slide the parchment paper with the baked wrap onto a cutting board and cut into 4 rectangular pieces.
