This hearty Cowboy Stew recipe is a comforting and flavorful dish that combines bacon, beef, sausage, vegetables, and spices in a rich broth. Perfect for a cozy family dinner or a gathering with friends.

Ingredients

Bacon:

6 slices chopped bacon

Ground Beef:

1 lb

Kielbasa Sausage:

1 lb, sliced

Onion:

1 medium, chopped

Carrots:

2 large, peeled and chopped

Garlic:

3 cloves, minced

Chili Powder:

2 teaspoons

Cumin:

1 teaspoon

Smoked Paprika:

1 teaspoon

Rotel Tomatoes:

2 cans (10 ounces each)

Pinto Beans:

2 cans (15 ounces each), drained and rinsed

Corn:

1 can (15 ounces), drained

Beef Broth:

2 cups low-sodium

Potatoes:

4 medium Yukon Gold, peeled and diced

Peas:

3/4 cup frozen

Salt and Pepper:

To taste

Parsley or Cilantro:

Chopped, for garnish (optional)

Instructions

  1. Cook the Bacon: In a Dutch oven or large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside.
  2. Brown the Meat: Add the ground beef to the pot, breaking it up with a spatula as it cooks. When the beef is about halfway browned, add the sliced sausage, onions, and carrots. Continue cooking until the beef is fully browned and the onions are soft.
  3. Add the Spices: Reduce the heat to low and stir in the garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute, stirring frequently.
  4. Simmer the Stew: Add the Rotel tomatoes, pinto beans, corn, beef broth, and diced potatoes. Increase the heat and bring the mixture to a low boil. Once boiling, reduce the heat and simmer until the potatoes are tender, about 20-25 minutes.
  5. Finish the Stew: Add the frozen peas and cook for another 2-3 minutes. Season with kosher salt and freshly ground black pepper to taste. If desired, sprinkle with fresh parsley or cilantro before serving.

Notes

  • You can leave the skin on the potatoes for added texture and fiber.
