Avocado Hummus
- 1 (15 oz) can chickpeas, well drained
- 2 medium ripe avocados, cored and peeled (approximately 13 oz before cored and peeled)
- 3 Tbsp olive oil, plus more for serving if desired
- 1 1/2 Tbsp tahini
- 3 Tbsp fresh lime juice
- 1 clove garlic, peeled
- Salt and freshly ground black pepper, to taste (about 1/2 tsp salt and 1/8 tsp pepper recommended)
- 1/8 tsp cumin
- 1 – 2 Tbsp finely chopped cilantro leaves, for topping
- Red pepper flakes, for topping
- Blend Base Ingredients: Pulse the drained chickpeas, olive oil, tahini, lime juice, and garlic in a food processor until smooth, which should take about 2 minutes. This creates the classic creamy base for the hummus.
- Season and Add Avocado: Season the mixture with salt and freshly ground black pepper to taste (around 1/2 tsp salt and 1/8 tsp pepper), then add the cumin and peeled, cored avocados. Pulse the mixture again until it is smooth and creamy, about 1 to 2 minutes longer.
- Serve and Garnish: Transfer the avocado hummus to a serving bowl. If desired, drizzle additional olive oil on top and sprinkle with finely chopped cilantro leaves and red pepper flakes for color and a touch of heat. Serve chilled or at room temperature with pita chips or tortilla chips for dipping.
