  • 12 oz spicy Italian chicken sausage, sliced

  • 1 cup dry orzo
  • 2 cups low sodium chicken broth
  • 1/4 cup full-fat canned coconut milk or heavy cream
  • 1 Tbsp low sodium soy sauce
  • 1 tsp onion powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp fresh or dried thyme
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach leaves

Instructions

  1. Cook the Sausage: Heat olive oil in a skillet, cook chicken sausage until browned. Add minced garlic and sauté.
  2. Toast Orzo: Add dry orzo to the pan, toast briefly. Pour in chicken broth, coconut milk, soy sauce, seasonings, and thyme.
  3. Simmer: Bring to a boil, then simmer covered for 10-12 minutes until orzo is tender.
  4. Add Spinach: Stir in spinach until wilted. Mix in Parmesan cheese. Season and serve.
