Chicken Wild Rice Soup:

  • 1 ½ lb chicken breasts
  • 4 carrots, sliced
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 810 c chicken broth (low sodium)
  • 1 c wild rice (not a boxed mix)
  • 4 garlic cloves
  • 1 bay leaf
  • 1 T Italian Seasoning
  • 1 tsp thyme
  • 1 tsp parsley
  • ¼ c flour (gluten-free)
  • ½ c half and half
  • ½ c whole milk
  • ½ tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Dice onion, chop carrots, celery and mince garlic. Prepare vegetables.
  2. Lay chicken at the bottom of the slow cooker and season. Add garlic, Italian seasoning, thyme, parsley, salt, and pepper. Place onion, carrot, and celery on top.
  3. Add broth, rice, and bay leaf. Cover and cook on low for 6-8 hours.
  4. Shred chicken. Return to soup.
  5. Mix flour, milk, and cream. Pour into soup gradually and stir until creamy.
  6. Serve. Enjoy with bread and parsley.

Notes

  • You can adjust the seasoning according to your taste preference.
  • For a thicker soup, use less broth or add more flour for a creamier consistency.
