Instructions

  1. Prepare and cook vegetables: Place the garlic, cauliflower florets and stalk pieces, diced potatoes, chopped onion, milk, and chicken broth into a large pot over high heat. Bring to a boil, then reduce the heat to medium and simmer covered for 10 to 15 minutes, or until the cauliflower is very soft and tender.
  2. Blend the soup: Using a handheld blender, carefully blend the soup directly in the pot until completely smooth and creamy. Be cautious of the hot liquid to avoid splashes.
  3. Season and adjust consistency: Add salt and pepper to taste. If the soup is too thick for your liking, stir in additional milk, water, or broth until the desired consistency is reached. For a thicker soup, let it simmer uncovered a bit longer to reduce, but monitor closely to prevent over-reducing and excess saltiness.
