For the orzo:

  • 8 ounces uncooked orzo

For the mushrooms:

  • 3 tablespoons butter, divided
  • 1 pound mixed mushrooms, sliced (baby bella, shiitake)
  • 1 large shallot, minced
  • 5 large garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup heavy cream
  • fine sea salt and freshly-ground black pepper
  • 1 ounce freshly-grated Parmesan cheese
  • 2 handfuls fresh baby spinach
  • 1/2 cup loosely-packed chopped fresh basil
  • zest and juice of 1 small lemon (optional)

Instructions

  1. Heat the water for the orzo – Bring a large saucepan full of generously-salted water to a boil.
  2. Brown the mushrooms – Heat 1 tablespoon butter in a large sauté pan. Sauté half of the mushrooms until browned. Repeat with remaining mushrooms.
  3. Cook the orzo – Add orzo to boiling water and cook until 2 minutes shy of al dente.
  4. Sauté the veggies – Sauté shallot, garlic, and red pepper flakes in butter. Add cooked mushrooms, cream, salt, and pepper.
  5. Combine – Add cooked orzo and pasta water to the pan. Cook until al dente.
  6. Finish – Remove from heat. Stir in Parmesan, spinach, basil, lemon zest/juice. Adjust seasoning.
  7. Serve – Garnish with Parmesan and enjoy!
