For the Chicken:

  • 2 large boneless/skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons butter, melted
  • 12 tablespoons olive oil

For the Sauce:

  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Season/Sear the Chicken: Slice the chicken into 2-3 thinner slices. Pound with a meat tenderizer if needed to ½ inch thickness. Season each side with Italian seasoning, salt, and pepper. Brush with melted butter. Sear in a hot pan for 4-5 minutes per side until golden brown. Set aside.
  2. Make the Sauce: In the same skillet, combine cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix. Simmer for 5 minutes. Return chicken to the skillet, spoon sauce over the top. Cover and simmer for an additional 10 minutes.
  3. Optional: Serve with baked potatoes and extra sauce on top for a delicious meal.
