Ingredients

Scale

Crust and Topping

  • 1 cup butter (softened)
  • 2 cups flour
  • ½ cup brown sugar
  • ¼ teaspoon salt

Filling

  • 1 cup dark chocolate chips
  • 14 ounces sweetened condensed milk
  • 1 cup fresh raspberries
  • 1 cup chocolate chips (optional, for topping)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350ºF. Line an 8 x 8 inch baking pan with parchment paper and lightly spray it with cooking spray to prevent sticking.
  2. Make crust mixture: Using an electric mixer, cream the softened butter until smooth. Add the brown sugar, flour, and salt, then mix until the mixture becomes crumbly.
  3. Form crust base: Press 1 3/4 cups of the butter mixture firmly into the bottom of the prepared baking pan. Set the remaining butter mixture aside to use as a topping later.
  4. Bake the crust: Bake the crust in the preheated oven for 10-12 minutes or until it turns slightly browned.
  5. Prepare chocolate filling: While the crust is baking, combine 1 cup of dark chocolate chips with the sweetened condensed milk in a microwave-safe bowl. Microwave at medium power for 1 to 2 minutes, stirring until the chocolate is just melted and smooth.
  6. Assemble bars: Remove the crust from the oven and pour the melted chocolate mixture evenly over the crust. Then sprinkle the remaining butter mixture on top and evenly distribute the fresh raspberries on top of that. If desired, sprinkle the optional 1 cup of chocolate chips over the raspberries for extra chocolatey goodness.
  7. Final bake: Bake the assembled bars for 20-30 minutes. Remove them from the oven just before the chocolate chips on top start melting completely to maintain some texture.

Notes

  • Use fresh raspberries for the best flavor and texture.
  • You can substitute dark chocolate chips with semi-sweet or milk chocolate chips according to taste preference.
  • Allow bars to cool completely before cutting to ensure clean slices.
  • These bars can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • For a firmer crust, chill the dough for 30 minutes before pressing into the pan.
