These Date Nuts Energy Balls are a quick, healthy snack made from pitted dates, almonds, and walnuts, blended with vanilla and cinnamon for a naturally sweet, energizing treat. Perfect for on-the-go snacking or a nutritious boost.

Ingredients

Scale

Ingredients

  • 1 cup pitted dates
  • 1 cup nuts (almonds and walnuts)
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon powder (or pumpkin spice)
  • ⅛ teaspoon sea salt (optional)

Instructions

  1. Prepare the Dates: Add the pitted dates and vanilla extract to the food processor jar and blend until the mixture becomes soft and forms a ball. If the dates are dry, add a couple of tablespoons of water to ease the blending process.
  2. Process the Nuts: Add the almonds and walnuts to the food processor along with a pinch of sea salt and cinnamon powder. Blend to your preferred texture — either coarsely so that bits of nuts remain or finely ground. The nuts will release oils that help in binding the balls.
  3. Combine Dates and Nuts: Mix the processed dates and nut mixture thoroughly. The combined mixture should be sticky and form a dough. Use your hands or a spatula for mixing.
  4. Form Energy Balls: Scoop about one tablespoon of the mixture and roll it between your palms to form small bite-sized balls. A small cookie scoop can also be used for uniformity.
  5. Serve and Enjoy: Your Date Nuts Energy Balls are now ready to be enjoyed as a healthy snack anytime.

Notes

  • Use pitted dates for easier processing and better texture.
  • If the mixture is too dry, add a little water to assist in binding.
  • Adjust the amount of cinnamon or substitute with pumpkin spice as preferred.
  • Store in an airtight container in the refrigerator for up to one week.
  • Feel free to customize the nuts depending on availability or preference.
