Cake:
- 45g Ground whole oats (1/2 cup)
- 1 tsp Baking powder
- 1 Carrot, grated
- 1 Medium banana, mashed
- 70g Peanut butter (1/4 cup)
- 1 Large egg
- 140g Plain Greek yogurt (1/2 cup)
Frosting:
- 2 tbsp Natural peanut butter
- 1 tbsp Cornstarch
Instructions
- Preheat the oven to 350F/180C.
- Combine the oat flour and baking powder in a large bowl, whisk to combine.
- Add the carrot, mashed banana, peanut butter, and egg to the dry ingredients.
- Mix until just combined.
- Transfer the mixture to the lined cake tins and bake for 25 minutes, or until a toothpick inserted in the center emerges clean.
- Cool completely on a wire rack.
- Frosting:
- Combine yogurt, peanut butter, and cornstarch in a bowl.
- Whisk until smooth.
- Spread the frosting between the two cake layers and over the top, decorate with dog treats if desired!
Line 2 x 4-inch cake tins with baking paper.
