These Easy Apple Waffles are a delightful twist on traditional waffles, incorporating the sweet and tart flavors of fresh apples into a wholesome breakfast treat. They are deliciously moist and perfect for a cozy morning indulgence.

Ingredients:

  • 2 cups chopped apples (cut into 1/4-inch cubes, divided)
  • 2 Eggs (large)
  • 1 1/2 cups Old Fashion Oats
  • 3/4 cup Milk (more if needed)
  • 1/4 cup melted coconut oil
  • 1 tablespoon light brown sugar (packed)
  • 1 1/2 teaspoon Baking powder
  • 1/2 to 1 teaspoon ground cinnamon
  • 1/8 teaspoon Salt
  • Maple syrup (for serving)

Instructions

  1. Preheat your waffle iron.
  2. Add all ingredients along with 1 cup chopped apples (reserve 1 cup for later use) into a blender and blend until smooth. Tip: It took about 2 minutes in my blender.

  3. Pour batter into a bowl and stir the remaining 1 cup chopped apples into the batter. If the batter looks thick, then stir in 1 to 3 tablespoons of more milk.
  4. Add about 1/3 cup batter into each waffle plate and cook according to manufacturers’ instructions until deep golden. (I cooked for 6 minutes in my waffle iron).
  5. Remove the waffles onto a wire rack and repeat with the remaining batter. Pro tip: Remove the waffles gently! These waffles tend to be softer, due to the high water content in apples and the absence of flour.
  6. Serve waffles hot with maple syrup.

Notes

  • You can add a sprinkle of chopped nuts or a dollop of yogurt on top for extra flavor.
  • These waffles are best enjoyed fresh but can be stored in an airtight container in the refrigerator for a day or two. Reheat in a toaster for a crispy texture.
