Beef:

  • 3 pounds Beef chuck roast, boneless
  • 2 tablespoons Olive oil

Seasonings:

  • 2 Yellow onions (about 23 cups)
  • 4 garlic cloves (4 teaspoons)
  • 2 Dried Ancho chiles
  • ½ teaspoon ground cinnamon
  • 1 tablespoon Ground Cumin
  • ½ teaspoon Ground Smoked Paprika (or Ground Chipotle Pepper)
  • ½ teaspoon Dried thyme (ground or whole)
  • 1 tablespoon Dried oregano
  • 2 teaspoons salt
  • 2 teaspoons Ground black pepper
  • 2 bay leaves
  • 1 cup Fresh Cilantro Leaves
  • 8 ounces Tomato sauce (or crushed tomatoes)

Additional:

  • 45 cups Beef stock or broth
  • 18 Corn Tortillas, 6 inch (assumes 3 tacos per serving)
  • 20 ounces Oaxaca cheese, shredded (mozzarella is a good substitute)

Instructions

  1. Prep-Ahead Steps – Dice onions, chop garlic, prepare chiles.
  2. Cook Beef – Sear beef, transfer to slow cooker with other ingredients, cook on Low for 8-10 hours, shred beef.
  3. Blend Sauce – Remove bay leaves, blend chunky sauce bits until smooth, mix back into the slow cooker liquid, pour sauce over shredded beef.
  4. Make the Birria Tacos – Dip tortillas in sauce, fill with beef and cheese, fold, bake, and serve with consomme.

Notes

  • You can customize the spice level by adjusting the amount of chiles and paprika used.
  • For a quicker version, you can also use a pressure cooker to cook the beef.
