Ingredients

Scale

For the Crust:

  • 1 ¾ cups finely crushed graham crackers
  • 1 stick butter, melted (8 tablespoons or 115 grams; divided)

For the Pudding Filling:

  • 2/3 cup white sugar, plus 1 tablespoon
  • 1/3 cup all-purpose flour
  • ¼ tsp salt
  • 2 cups milk (2% or whole milk preferred)
  • 3 egg yolks, beaten
  • 2 teaspoons vanilla extract
  • 3 tablespoons bourbon, divided

Additional Layers:

  • 45 ripe bananas, sliced
  • 3/4 cup heavy cream (whipping cream)

Instructions

  1. Preheat oven and prepare crust: Preheat the oven to 350 degrees. Mix crushed graham crackers with 6 tablespoons of melted butter, press into a pie plate, and bake for 5 minutes. Cool.
  2. Make the pudding: In a saucepan, combine sugar, flour, salt, and milk. Cook until thickened, then temper with egg yolks. Cook until thick, then add butter, vanilla, and bourbon. Cool.
  3. Assemble the pie: Layer sliced bananas over the crust, top with pudding. Chill in the refrigerator.
  4. Whip the cream: Whip cold cream with sugar and bourbon until peaks form.
  5. Finish the pie: Top the pie with whipped cream and cookie crumbles. Chill before serving.

Notes

  • If the pudding thickens too much, adjust the consistency with a little additional milk.
  • Chill the pie well before slicing for clean, neat servings.
